'No shame' banana- oatmeal cookies recipe

Hi everyone! 

Today I want to share a recipe with you all! I actually got this recipe from Jim Chapman on YouTube where he talked about how he needed to gain weight but didn't want to eat crap for this. So he made these banana-oatmeal cookies and I really wanted to try them out. I didn't include chocolate chips but if you do, you will get sweeter cookies. These cookies are perfect for a light and healthy evening snack. Now seriously, these are the best tummy fillers ever. You eat 2 of them and you're full. But that's good, right?!


Ingredients:
  • 3 bananas
  • 2 eggs (Jim used only egg whites but I put the whole egg into the dough)
  • 3/4 cup of milk
  • 1,5 cups of whole grain flour
  • 2,5 cups of oatmeal
  • Optional: 1 cup of dark chocolate chips
  • Optional: protein powder
PS! I fried my oatmeal on the pan before putting it into my dough. The cookies will end up more crunchy if you do this.

Directions:
First things first. Mash up your bananas, either with a fork, blender or whatever works the best for you. After mashing the bananas, you will end up with a runny mixture that looks like a smoothie. Make sure you will get all the clumps out! 
Then add your two eggs to the mixture and stir until the two ingredients are well mixed. Now, add your milk and mix again. Then, add the flour and oatmeal and mix until a fine dough is formed.  Now, after doing all this, my dough was a little runny, it might have been because of the egg yolks. So I added some more flour and oatmeal until I had a thick dough.
Preheat oven to 200 degrees celsius.
Then, lay a baking paper onto the tray and start putting handfuls of the dough onto the tray until you're finished.
Bake the cookies for approximately 20-25 minutes or until they're nice and golden-brown.


Voila! Have a glass of milk with a couple of these bad boys :)

  2. Make sure you do! I would even recommend to let them sit overnight after being cooked, they taste even better then!
